If you fancy something a little different on Christmas Day and don’t want to be bothered with cooking a whole turkey, this one-pot twist by Mary Goodwell is a vibrant, zesty dish that will delight your guests.
6 turkey thighs or legs
55g (2oz) fresh or frozen cranberries
1 orange, sliced
Good quality olive oil
1 teaspoon salt
1 teaspoon pepper
2-3 spring of rosemary sprigs
1 Preheat your oven to 190C/170C Fan/Gas 4.
2 Take a medium sized casserole or roasting dish and place the turkey legs inside.
3 Add the sliced orange, rosemary sprigs and cranberries to the dish.
4 Cover the meat with a generous drizzle of olive oil and season with salt and pepper.
5 Cover the dish with foil and put into the oven and cook for approximately 1hr to 1hr 30mins depending on the size of your turkey thighs or legs. Remove the foil from the dish for the last 15 minutes to brown the legs nicely.
6 This dish goes well with roast potatoes and steamed seasonal veggies or works with all the festive trimmings for a Christmas feast.
