Easy Peasy Apple Tarts

These simple but incredibly delicious apple tarts are made with ready made all- butter puff pastry with hints of cinnamon and sweet apricot jam. They are an ideal weekend treat or dessert
INGREDIENTS
1 (320g/11oz) sheet of all-butter ready rolled puff pastry
3 crisp eating apples (such as Coxs)
85g (3oz) of apricot jam plus 1tsp water
50g (2oz) light brown sugar
1⁄2 tsp cinnamon
2 tbsp butter
METHOD
1 Preheat the oven to 220°C/180° Fan/Gas 6. Line a baking sheet/tray with baking/greaseproof paper.
2 In a small bowl mix the apricot jam and water to make a spreadable mixture and in a separate bowl mix the sugar and cinnamon.
3 Peel and core the apples, cut into halves and thinly slice, keep them stacked together to make it easy to lay out on the pastry.
4 Cut the pastry into six equal rectangles and arrange on the lined baking tray. Score around the edges of each rectangle to allow the edges to puff up when cooked. Spread the apricot jam mixture evenly over the middle of each pastry, reserving some for glazing.
5 Arrange the apple slices on top of the jam, fanning them across the pastry so they are evenly spread out and not piled high. Then sprinkle over the sugar and cinnamon mixture and dot pieces of the butter over the top of the apples.
6 Bake in the oven for approximately 20 minutes, or until golden and crisp. Remove from oven and allow to cool for 10 minutes, finish with a brush of apricot jam for a final glaze. Delicious served warm with ice cream – yummy!
